Hello all. Whew I have not been giving any recipes for so long
now, no no am cooking every single day, but somehow not posted any of the
dishes been very preoccupied with crochet and family commitments, so let me start
again, it is peak summer and mangos are a plenty. In the south we use
mango that is raw ones, for chutneys, pickles and rice’s, so today
am
posting a tasty dish called the Mango rice, it is light but
delicious, so here goes…..
Make required quantity of rice, and cool, each grain must be
separate please do not over cook the
rice.
Grate the mango, after skinning it, or you could cut it and
run it in the mixi
With a little oil a [tea spoon is enough] , pit in a pinch
od ‘hing’, methis seeds [teaspoon] and
red chillies according to taste. Fry this for a minute and remove from fire
Add raw mustard[ teaspoon], half a cup of grate coconut and your fried ingredients, grind to a paste
Take a vessel put in the fire, pour a little oil , splutter mustard
seeds, adds urad and channa dhal, a few
curry leaves, cashew would be a wonderful touch add one spoon of ghee, turmeric
powder, the ground masala, and fry for 3
/4 minutes add salt and then the cooled rice, mix it well , your mango rich is
ready.
Alternatively, you can use green chillies instead of red
chillies
